Sebastien Christophe's Story

"In 1999, I returned to the family farm which had at that time, just a few vines (about 0.60 ha).The majority of production was sold in bulk to traders.

Today we are very proud to say we have approximately 10 hectares and bottle our wonderful Chablis ourselves.

Let me tell you a tale about Chablis, it is a small town of about 2700 inhabitants, situated between Paris and Dijon, Chablis is the cradle of an ancient vineyard. Citeaux, near Dijon, in the XII century was the seat of an abbey's famous and Beine, second daughter of Citeaux, who did succeed in part the vineyards of Chablis. A very old cave preserved to this day, the cellar of the "Small-Beine" was built by the monks. Witness of the past, a press to "slaughter" throne in the courtyard.

In the nineteenth century, Chablis wines were exported to many countries, mainly in northern Europe (England, Netherlands, Belgium, Germany), but also the United States and Russia.The Tolstoy, 'Anna Karenina', describes Russian society of the nineteenth century, it says that it particularly appreciated at that time two French wines, Champagne and Chablis.

Price of success, the word "Chablis", now passed into common parlance, it can be used generally to mean dry white wines in many countries.The name Chablis has become commonplace, judging by the volume of wine that copy us, the Americas and Australia.

In truth Chablis wines can be produced in France, and 6830 acres maximum. This soil is the result of a delimitation of the Institut National des Appellations d'Origine (INAO). But it is actually the culmination of a long selection of land suitable for producing the best wines, first selection made by the monks and continued by many generations of winemakers. This finage is located on a set of land formed at a precise time in the history of the earth, there are several million years. Geologists have given it the name of Kimmeridgian, referring to land in the village of Kimmeridge in England found in these two sites the same fossil oysters (Ostre point).

We only produce true Chablis. We hope you can taste the difference all our fine land and hard work make."

simple (not messed around with) C but with enough fruit, wood and minerals to give it character and interest. Nice easy drinking and good with food
